There are lots of clean eating goddesses out there in the blogosphere from whom I draw inspiration. One example is the wonderful team at Simple Green Smoothies. They have a 7-day green smoothie challenge going on right now. They send recipes for tasty green blender drinks to your inbox for free for you to blend up.
Although today I decided to go out on my own and improvise with what I had in the freezer. I came up with this simple and satisfying new Peach Pineapple Smoothie recipe.
The foundation of this smoothie, as most of mine are, is fresh aquaponically grown kale, plucked straight from my basement. (Thanks to Fresh Daddy for keeping our greens growing all year long!) I blended it up with hempseed in boxed unsweetened coconut milk. Then I added the remaining ingredients.
I always take a little taste test before I call it done, even when I’m making a time-tested smoothie. Just because there can be significant variation in the bitterness of the greens or the sweetness of the fruit. Another thing I always do when I’m trying to get my kids to go a green smoothie with me is to enlist them as taste-testers. When the pickiest eater gives a thumbs up, you know you’re good to go.
On first blend with this baby, I was tasting a bit more of the kale than I wanted. So I tossed in a few more cubes of frozen pineapple and tried it again. I wasn’t sure whether it would be sweet enough for the Freshlings. I was ready to squeeze a few stevia drops in if needed, but no. To my surprise, they went for it. Next thing I knew, they had both drained their glasses.
- 1 ½ c baby kale leaves
- 1 ½ c frozen pineapple
- 1 ½ c frozen peaches
- 3 c unsweetened coconut milk
- 3 scoops powdered probiotic
- 1 T hempseed
- 1 scoop protein powder
- Blend kale and hempseed with coconut until smooth.
- Add remaining ingredients.
- If too thick, add more liquid; if too runny, add more fruit. If you need it sweeter, add 5-10 drops of liquid stevia.
